500 g flour0.29 l water7 g yeast30 g sugar10 g salt30 g sesame seeds

Using: kitchen and oven

  1. Mix flour, yeast, salt, 15 g sugar and water. Knead the firm dough for 10 minutes until smooth, then cover and rise for 60–90 minutes.

  2. Divide into eight pieces, form tight balls and rest for 10 minutes. Push a finger through each centre and stretch to make a hole about 4 cm wide.

  3. Heat the oven to 220°C and bring a wide pan of water to a simmer with the remaining sugar. Boil the rings in batches for 45 seconds on each side.

  4. Drain onto lined trays, scatter with sesame and bake for 20–25 minutes until glossy and golden. Cool before splitting.
