Using: kitchen and oven
Set the oven to 175°C and line a square baking tin.
Cut the chocolate into small pieces for even melting. Warm the chocolate and butter together in a bowl over gently simmering water. Remove the bowl from the heat and stir until smooth, then leave to cool until no longer hot.
Whisk the eggs and sugar until the mixture becomes thicker and slightly lighter. Fold the cooled chocolate mixture into the eggs.
Sift flour, cocoa and salt together. Fold the dry mixture into the wet just until no dry streaks remain.
Spread the batter evenly into the lined tin. Bake for 25–30 minutes until the edges are set and the centre still has a slight softness.
Leave the brownies to cool completely so the centre firms before slicing. Lift out using the lining and cut into the planned squares.
