Makes 480 g

Peanut butter
500 g peanuts4 g salt

Using: kitchen and oven

  1. Sort the shelled peanut kernels. Spread on a tray and roast at 170°C for 12–18 minutes, stirring halfway, until golden and fragrant.

  2. Cool for 5 minutes, then process while still slightly warm. The nuts pass from crumbs to a stiff mass before becoming a flowing paste; scrape down and pause if the motor warms.

  3. Add salt and continue to the desired texture. For crunchy peanut butter, reserve a handful of roasted nuts, chop and stir them in at the end.

  4. Scrape into clean jars, cool fully and cover. Stir any separated oil back through before using.
