Strawberry jam

Strawberry jam
1 kg strawberries750 g sugar50 g lemon juice

Using: kitchen and oven

  1. Wash and hull strawberries, cutting large ones in half. Put a small plate in the freezer to use for testing the set, and prepare clean heatproof jars.

  2. Put fruit, sugar and lemon juice in a wide heavy pan. Warm gently, stirring until the sugar dissolves completely.

  3. Bring to a rolling boil and cook for about 10–15 minutes, stirring to prevent catching. Test a spoonful on the cold plate; when cooled briefly, it should wrinkle when pushed.

  4. Remove from heat, skim foam and rest for 5 minutes so fruit distributes evenly. Spoon into the prepared jars and close them according to the jar system’s instructions; refrigerate this small batch after cooling.
